Is it still science when they do science, or do the rules somehow stop applying?

It depends entirely on perception. Earthly sciences still come with certain notions, even if the particulars in the details of the mathematics don't change.
Does it bother you when I put it that way?

No. But I can't help but wonder if you do it because it's how your people speak, or because you know that someone will ask after it.
